Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or place a wire rack over the baking sheet.
  2. Pat the chicken thighs thoroughly dry with paper towels. Removing excess moisture helps the skin become crisp during baking.
  3. Place the chicken thighs in a bowl and drizzle with olive oil. Sprinkle with paprika, garlic powder, onion powder, dried thyme, salt, and black pepper. Rub the seasoning evenly over the chicken, including the skin.
  4. Arrange the chicken thighs skin-side up on the prepared baking sheet, leaving some space between each piece.
  5. Bake for 35 to 40 minutes, or until the skin is deeply golden and crisp and the internal temperature reaches at least 165°F (74°C) at the thickest part of the meat.
  6. Remove the chicken from the oven and let it rest for about 5 minutes before serving.
