Ingredients
- 1 1/2 pounds beef sirloin, thinly sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 8 ounces cremini mushrooms, sliced
- 1 medium yellow onion, thinly sliced
- 3 garlic cloves, minced
- 1 tablespoon all-purpose flour
- 1 1/2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 3/4 cup sour cream
- 12 ounces egg noodles
- 2 tablespoons chopped fresh parsley

Instructions
- Bring a large pot of salted water to a boil. Cook the egg noodles according to the package directions until tender. Drain and set aside.
- Pat the beef dry with paper towels and season it with salt and black pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the beef in batches and sear for about 1–2 minutes per side, just until browned. Transfer the beef to a plate.
- Reduce the heat to medium and add the butter to the same skillet.
- Add the mushrooms and onion. Cook for 5–7 minutes, stirring occasionally, until the mushrooms are browned and the onion is tender.
- Add the minced garlic and cook for about 30 seconds.
- Sprinkle the flour over the vegetables and stir for 1 minute.
- Slowly pour in the beef broth while stirring to prevent lumps. Add the Worcestershire sauce and Dijon mustard.
- Bring the sauce to a gentle simmer and cook for about 3–4 minutes, until slightly thickened.
- Reduce the heat to low. Stir in the sour cream until the sauce is smooth and creamy.
- Return the beef and any accumulated juices to the skillet. Cook for 2–3 minutes, just until heated through. Avoid boiling the sauce after adding the sour cream.
- Serve the beef stroganoff over the cooked egg noodles and garnish with fresh parsley.
Final Thoughts
Classic beef stroganoff combines tender strips of beef, browned mushrooms, onions, and a creamy savory sauce. Served over egg noodles, it makes a comforting dinner that comes together in about 40 minutes.
