Ingredients
- 1 lb (450 g) large shrimp, peeled and deveined
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 1 small yellow onion, finely diced
- 4 cloves garlic, finely minced
- 1 cup (200 g) long-grain white rice, rinsed
- 2 cups (480 ml) chicken or vegetable broth
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh lemon juice
- 2 tbsp chopped fresh parsley

Instructions
- Pat the shrimp dry with paper towels and season with paprika, salt, and black pepper.
- Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the shrimp and cook for about 1–2 minutes per side, just until they turn pink. Transfer the shrimp to a plate.
- Reduce the heat to medium and add the remaining tablespoon of butter. Add the diced onion and cook for 2–3 minutes, until softened.
- Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
- Add the rinsed rice and oregano. Stir for about 1 minute, allowing the rice to lightly toast.
- Pour in the broth and bring the mixture to a gentle boil. Reduce the heat to low, cover the skillet, and cook for 15–18 minutes, or until the rice is tender and has absorbed most of the liquid.
- Return the shrimp to the skillet, cover, and cook for another 2–3 minutes, until the shrimp are fully cooked and the rice is tender.
- Remove from the heat and drizzle with fresh lemon juice. Sprinkle with chopped parsley and serve immediately.
