Ingredients

  • 1 1/2 pounds beef sirloin, thinly sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces cremini mushrooms, sliced
  • 1 medium yellow onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 3/4 cup sour cream
  • 12 ounces egg noodles
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil. Cook the egg noodles according to the package directions until tender. Drain and set aside.
  2. Pat the beef dry with paper towels and season it with salt and black pepper.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the beef in batches and sear for about 1–2 minutes per side, just until browned. Transfer the beef to a plate.
  4. Reduce the heat to medium and add the butter to the same skillet.
  5. Add the mushrooms and onion. Cook for 5–7 minutes, stirring occasionally, until the mushrooms are browned and the onion is tender.
  6. Add the minced garlic and cook for about 30 seconds.
  7. Sprinkle the flour over the vegetables and stir for 1 minute.
  8. Slowly pour in the beef broth while stirring to prevent lumps. Add the Worcestershire sauce and Dijon mustard.
  9. Bring the sauce to a gentle simmer and cook for about 3–4 minutes, until slightly thickened.
  10. Reduce the heat to low. Stir in the sour cream until the sauce is smooth and creamy.
  11. Return the beef and any accumulated juices to the skillet. Cook for 2–3 minutes, just until heated through. Avoid boiling the sauce after adding the sour cream.
  12. Serve the beef stroganoff over the cooked egg noodles and garnish with fresh parsley.
