Ingredients

  • 1 1/2 pounds large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Pat the shrimp dry with paper towels and season with salt, pepper, paprika, and Italian seasoning.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for about 2 minutes per side, until pink and nearly cooked through. Transfer the shrimp to a plate.
  3. Reduce the heat to medium and add the butter. Add the garlic and sun-dried tomatoes and cook for about 1 minute, stirring frequently.
  4. Pour in the chicken broth and heavy cream. Stir well and bring the sauce to a gentle simmer.
  5. Add the Parmesan cheese and stir until melted and the sauce becomes creamy.
  6. Add the spinach and cook for 1–2 minutes, until wilted.
  7. Return the shrimp to the skillet and cook for another 2–3 minutes, until fully cooked and coated with the sauce.
  8. Sprinkle with fresh parsley and serve immediately.
